If you all have a question about what type of paint / paint process is used on a specific vehicle, where do you get that information? Is there a centralized place, or just the good old searching the internet? Do manufactures have this information available?

Haha. That info is harder to find than you think. I have Emailed, called, posted, searched, etc. and I still don't have a definite answer about some Toyota paint. It's more curiosity than anything for me. I did have a guy at another board (a Toyota employee who seems to be very knowledgable from my reading of his posts) say that Toyota tries to "contract" or outsource some things locally, depending on the location. That could mean two Camrys that are identical in year, model, etc. could have two different types of paint. It was the first time I had ever heard something like that, but it does make sense.

I don't believe in grit guards.
